This was a little test cake that I made this weekend. I tried out a gluten free vanilla cake recipe before making it for a friend later this week. I halved the recipe and made a little 5" two layer cake. I think I have OCD (Obsessive Cake Disorder) as rather than simply icing it then slicing it for a taste, I decided to decorate it with the leftover blue buttercream from my kayak cake and some of the extra fondant flowers I have on hand after doing the cupcakes last weekend. I also tried out a new butercream comb on the sides. Ideally it should have been baked an additional few minutes but other than that, no complaints. It has a nice texture and taste and baked higher than I expected of a gluten free cake. Because it was only for me I didn’t trim the bottom of the cakes off to make it look all pretty when cut.
