I made and entered this cake for yesterday’s Strawberry cook-off at the Jaemor Farm Strawberry Festival. When I’m not baking I help run my own family’s farm so I know that great recipes start with the freshest ingredients and since 70% of the points were based totally on taste I had to put as much effort on the inside as I did on the outside. I went with a 4 layer vanilla cake with 3 layers of fresh strawberry cream filling and chopped strawberries. On top were fresh strawberries cored and stuffed with marshmallow cream cheese fruit dip and capped off with a fondant leaf so that the whole thing was ready to pop in your mouth. In the center of the cake was a sculpted figure of the owner. The festival was PACKED with thousands of people from all over the state! There were cars parked off the interstate for nearly a half mile back and I was told that this cook-off had more entries than any other year. My cake got the top honor of Best of Show. I was Thrilled!
