The cake is a lemon cake. I was asked to make a cake and my brief was just make a pretty cake. It was for a friend’s mum who was turning 80! So I made start with a couple of gumpaste roses and I used a peony bud (I had previously made). I wanted to try to do ruffles, as that was new to me, I also fancied trying to do an ombre effect. At the moment no cake feels designed, as such, as I have an idea when I’m decorating and mid cake, the design changes! I’m hoping this approach to cake design changes soon, in that I have tried all these different techniques and I can sit and design and create that design. But at the moment I’m enjoying the spontaneity.
