I made this 2-layer 8-inch round Italian cream cake for a customer that couldn’t eat nuts in the cake but wanted them on the outside, so her husband could eat them. So I usually put nuts (pecans) in the cake and coconut, as a traditional Italian cream calls for, but I toasted the coconut on the outside to add flavor and texture. Cream cheese icing for filling and frosted on the outside of the cake.
