Wishing my father a hundred years of health and happiness for his 87th birthday. Sadly, the day after his birthday my papa received terrible news about his health which has left us all devastated and in shock. This cake is now even more important because this is what we all want for papa – health and happiness.

The cake is vegan and gluten free Red Velvet cake. Papa loves apples and chillies, eating them every day and enjoying every minute of it – Bless :) The apple and chillies are fondant, hand modelled and then airbrushed in various shades of red, yellow, orange and brown to obtain a lovely rich glossy colour that popped against the black and bronze. You can just see my reflection in the apple as I am taking the photo. The cake is bronze painted ganache with fondant black squares to provide a contrast between rough and smooth so it was a little more masculine.
