2-layer 8-in. round buttercream design with white chocolate sea shell mints I made from molds. Edible pearl candies used for bubbles and gray pearls. Edible gold sugar around edges.
I frost entire cake in white buttercream, and smooth, then I add blue icing, and then smooth around sides, not evenly to mimic waves. I then add #10 dots of turquoise and deeper blue all around sides staggering colors about every 2-3 inches. I then smooth that in, to add color differentiation for water colors. I etch tail on with tooth pick, outline in dark and light green #3, then use #4 for tail altering purple, blue and turquoise.
I used #4 or 5 scallop motion across for each color to resemble scales in same colors as tail. I re-outline tail in greens. White tip #5 or 6 to make white wave boarders as it comes to shore… then place white small pearls in water for bubbles, and gray pearls around top and sides. Sea Shell Mints around base of cake. writing in #4.
