peach pastry: crunchy pastry crust made by almond flour and a pinch of pink sea salt.
thin layer of cocoa butter to make the crust grease and liquid proof. caramelized fresh figs on the bottom, pastry cream and fresh spanish peaches on top with just a sprinkle of dark brown moscovado.
blueberry pastry: fondant hazelnut pastry crust cover in raspberries compote, mascarpone cheese cream with black espresso powder and a thik layer of wild blueberries. i’ll soon share recipes…’ till then ENJOY!!
