That cake was for a man who enjoys sailing and nearly every weekend takes his sailboat. He loves it so he asked me to make him a tall cake with his sailboat. So I make him a veeeery tall cake ha ha with his beloved sailboat on the top. He didn´t imagine when I told him I was going to make the sea without fondant it was going to look that way. He loved it when he saw it, he was so happy… I remember his laughing and his joyful expression. That´s the best reward when I make a cake. It gives me peace and happiness.
It´s a cocoa and coffee sponge (again I know, but people love this flavour) with layers of walnut and chocolate buttercream. An the sea is made with coloured mascarpone buttercream.
