This is my first professional cake – one year ago I wasn’t in business and hadn’t made anything more interesting than a Victoria Sandwich so I’m really happy with the way this turned out. There are three tiers of, Lemon, Chocolate and Vanilla Bean sponge – all filled with white chocolate ganache, lemon curd or red current jam, then covered in white chocolate ganache and fondant. The top tier is a dummy cake with two tailors dummies – the brides dress – an Alan Hannah gown encrusted with Swarovoski Crystals and the grooms suit was from the Tales of the UnexpecTed range of Ted Baker London with Peacock silk lining – all hand made in sugarpaste. The roses were sugarpaste and made with the help of the wonderful Kara’s Coutre Cakes tutorial.
