Hi all :)
This is my first post – the first wedding cake I made for someone outside my immediate family – and the largest project I’ve ever done to date haha. Its 400 guests-worth of chocolate and vanilla sponge cake, covered in white chocolate ganache then a thin outer layer of coverture chocolate on 9 tiers, 6", 2×8″, 2×10″, 2×12″ and 2×14″. The decorations are modelling chocolate roses and cake lace, with burgundy buttercream accents. I was making it during a heatwave, so I had to make the roses a little thicker than I would have liked. This was my first time baking anything so big, first time covering a cake all over in chocolate (I had a few disasters before I managed to get the nice sharp edges you see here lol), first time using cake lace, first time making modelling chocolate from candy melts…. well lets just say this was a lot of firsts. I also learnt the hard way how difficult it is to fit all this cake into a car and transport it then set it all up without incident. definitely a learning curve :)

Thank you Goreti and Julez! I’ve requested a photo from the wedding photographer to show the whole thing better… I forgot to mention each tier size is decorated a different way, symmetric around the display, and the top one has my first try at a wafer paper flower- a fantasy lotus blossom :) hopefully if I get a better photo I’ll put it up.
