So this is my foray into the world of wafer paper. I’ve been itching to do wafer paper flowers for some time since they exploded on the cake scene but have never had the chance. However when my client said “do anything you like” for this birthday cake, I was like YES! The flowers, apart from the small white hydrangea are wafer. Need more practice to get used to handling them but easy enough to make, apart from the buds on the bottom, they were a nightmare!
The cake itself was inspired by a gorgeous design by Sweetlake cakes. Two tiers of vanilla and raspberry ganached in white chocolate. “Jacks” is short for Jackleen and not for a man as my mother liked to think!
