My client gave me design freedom & just said to make it either Thomas or a zoo theme. So I thought, why not both? So Thomas is going to the zoo & making new friends that aren’t confined to tracks! I did this cake in record time, as it was the 7th cake of a crazy weekend that included a wedding. And I had flight delay that cost me two working days earlier in the week! Whew!!!
The cake is Australian chocolate mud with my own peanut butter filling & dark chocolate ganache. The decor is all fondant, except for the palm trees, which are pretzel sticks with wafer paper fronds. The wafer paper was a godsend to do the palm trees at the very last minute! I played with my airbrush & a stencil to create the gumpaste letters. All edible except for the zoo sign support structure.
