I was asked to make this cake similar to a picture that the client sent me. The picture had real dendrobium flowers on it and she wanted to know if I could make them in sugar. Ooooh I thought! I’ll give it a go. So here is my version and although I’m very biased; I love it! The top tier; was rich fruit drenched in French brandy, the middle was chocolate fudge and the base was traditional Madagascan vanilla using my own made extract with raspberry jam and lush vanilla buttercream.
