I’ve been wanting to work with Swiss meringue buttercream for some time, but I didn’t want to try before getting a KitchenAid mixer. I finally got one for my birthday/Christmas, so I was able to mix up a batch for the first time. It was perfect timing, too, because my whole family was getting together in San Diego for Thanksgiving, and I needed to bring something since I couldn’t help cook. The bottom tier is a 6" vanilla cake, and the top is a 4" chocolate cake. I didn’t want to have to come up with something too design-heavy, plus that’s just not my style. I love ruffles and swirls, so that’s exactly what I did, but I kept it simple and elegant. I love it because it reminds me of a wedding dress, and I looooove wedding dresses. :)
