Hello my Lovelies,

At the start of this year, I made myself a promise….to not let fear run my life anymore and to say yes to every opportunity that came my way…no matter how scary it might seem.

This month I was very fortunate to be included in the crew for the Australian Cake Decorating Network’s Cake Camp in Melbourne. To my knowledge, I hadn’t met any of the people that would be attending, and mostly only knew them through Facebook.

As you can imagine, I was excited but a little nervous. Within minutes of arriving at Melbourne Airport and finding my group, I was in cake heaven! It was a weekend of fun, cake, learning, cake and some more fun thrown in for good measure. I met some amazing people. So much talent and passion for cake and it’s community was an absolute joy to be part of.

The amount of work and organisation involved was mind boggling! I have never seen 45 kilos of chocolate before…I have also never seen 4 huge bakers racks groaning with all shapes and sizes of mud cake. The endless boxes of colours, wires, tools, cutters, styro, boards, bits and bobs were enough to make a caker drool!

Everyone was very sweet to me and I made some wonderful friends and actually met up with a few I hadn’t known were attending. And to think, this time last year, if I was asked, I would have said thank you, but no :(

So if you get the chance to attend a Cake Weekend, Camp, Show or even a class. Go for it! You will not only learn a load of new techniques and skills, you will make some very special friendships which to me, is one of the most special and amazing parts of the industry we are in.

Interview #21: Robert Haynes

Bio

My name is Robert Haynes and I am an accredited demonstrator (British Sugar Craft Guild) and International teacher and also the owner of the Sugar Flower Studios in London. UK

I am a full qualified professional chef and have worked in the food and beverage industry for over 25 years, specializing in hospitality and fine dining, where I developed an eye for layout and presentation. As a hobby I made celebration and wedding cakes for family and friends and it was by designing and creating these that my passion for sugar craft grew

As a completely self-taught sugar crafter, I learnt through reading books and studying the anatomy of flowers and foliage and wished I had access to classes and teachers to learn from. I myself, have a patient temperament when teaching, while still being full of energy & enthusiasm. As a very hands-on teacher I am keen to impart all that I know and gain enormous satisfaction from seeing the delight in my student’s faces when they achieve such brilliant results

One of my particular skills is recreating life-size botanically correct blooms which I show-case as pieces of art. I have also written a number of articles in various Sugar Craft magazines and have been commissioned for numerous “step by step” tutorials in floral design.

Bake This Tute Baileys Ganache   Margarida Matilde  
  • 200g chocolate (into small pieces)
  • 100ml cream
  • 100 ml of Baileys drink
  • Salt
  • 15gr. unsalted butter (softened at room temperature)

Preparation:
Place the chocolate in a bowl and reserve. Join cream, Baileys and salt , take it to boil in al pan. Pour the chocolate and wait for about 1 minute. Then add the butter and gently stir everything. Reserve in the fridge until you have the desired consistence to apply in the cake as a filling, covering or even as a great topping cupcake;)

Forum Question from YumCakes

Outrageous right?! That’s the request I got this evening from my neighbour’s fiancée. She wants me to make her a cake to feed 250 people for $200! Any suggestions? I’m thinking 3 tier simple buttercream roses with perhaps bands of diamond bling between each tier…..I would welcome your thoughts!
