I trained as a pastry cook and confectioner many moons ago.... Then went into the pub trade but kept on making cakes as a side line. Now retired but still work with the sugar for family and friends..... I am still learning after 50 years, with all the new equipment and products that are available now.... What a great trade we are all in....
