The cake will taste delicious – it is an absolute winner every time. I soak the fruit for at least 3 days in the sherry, giving it a good stir every day. The only thing is the texture will not be as ‘solid’ when it is cut as it would be if it were kept for a few months. I made a batch the other day and I am having to use the 10" for a Christening in two weeks because it is also a last minute order (yesterday). You can order an undecorated fruit cake online if you feel happier doing that? It’s not unusual to do that in a situation like this (although I understand you would prefer to bake your own). xx
