Hi Elizabeth! You don’t mention the expected size of your cake, but even so I think the easiest route would be to use cereal treats for the head and do definitely plan on some supports. As a general rule (even for non-sculpted cake) I will use straws/dowels for every 4-5" of cake height. And any cake 2+ tiers always gets a master dowel rod through the center. Just sharpen a wooden dowel and run it from the head through the body and into the cake drum at the base of the cake. Good luck with your kitty!
