I make a gluten free sponge. My flour has xanthan gum already in it, so it’s relatively easy. Think you have Dove gluten free flour in the UK, but it doesn’t include the xanthan gum. I add sour cream to my sponge cake recipe. Creates a nice dense, firm and moist cake.
