Hi
This is another of my faves – my number 1 artists palette knife. It has a really thin and flexible blade which is perfect for lifting and cutting (I find it cuts more cleanly than my scalpel, and it’s not technically sharpened, all of it is that thin and not just the cutting edge, so it doesn’t dull either). I like having a relatively long cutting edge, meaning I can press down to cut instead of drag (as you need to with knives etc) and find I get a better finish. Whenever I need to slide something under a ganached cake to lever it off, this is the tool I want to use – it takes no chunks out of the cake, is so thin it slides underneath easily unlike the best of my baking spatulas/ palette knives, and is strong enough to lift the cake edge plus board up by once it’s there. I use it to trim excess fondant from the sides of cakes after covering too, finding the canked handle perfect to get right up against the edge for a smooth finish. This is the one you can see in my first wisteria video. Another of my must-haves for my cake travel repair kits too.
