You can do this. There is a great tutorial on chocolate ruffles on Youtube from a UK site. This is exactly how I make my chocolate ruffles. I use two cel boards, one in the freezer as I work on a frozen board. When it gets too warm I trade it for the second frozen board and put the first one back in the freezer.
