They are very easy to make, but time consumming: You will need cake, frosting, lollipop sticks, candy melts, decorations, cellophane bags and ribbon.
1. Bake an 8" cake (any flavor), allow it to cool completely.
2. Crumb cake into a large bowl.
3. Gradually add frosting to the cake crumbs until you reach a paste-like consistency. I start with 2 tbs. of frosting and add more if required – some recipes call for 1/3, or 1/2 cup of frosting – I find this makes the cake pops too sweet and gooey.
3. Form the mixture into balls the size of your choice (don’t make them too large because the pops will be top heavy and may fall off the stick) and place onto a wax paper-covered baking sheet.
4. Melt Candy Melts according to directions (you can find these at Michael’s) Dip lollipop sticks into candy melt and stick about halfway into the cake balls. Refrigerate so they can firm up.
5. To cover the cake pops, melt additional candy melts in a deep bowl, stirring to ensure it melts evenly – if it’s too thick, you can add a couple of tablespoons of vegetable shortening. Remove from the microwave when they have melted and are smooth.
6. Place some sprinkles, or sugar crystals onto a plate.
7. Remove half the cake pops from fridge (if you take them all out at once, they will begin to soften and may fall off the stick) – Dip each cake pop into the candy coating, covering it completely. Don’t twirl it, just use an up and down motion. Let the excess drip off of the end.
8. Roll the cake pop in the sprinkles, or decorations. You can cover the entire cake pop in sprinkles, or only the top.
9. Place the end of the lollipop stick inside a piece of polystyrene foam so the candy coating can harden without damage.
10. Once the candy coating has hardened, place into cellophane bags and tie them with a ribbon.
It sounds like a lot of steps, but once you make a few, you’ll get the hang of it – check out YouTube – there are many good tutorial videos that will show you exactly how to go about making them.
