June’s friend from Harrow here ! Strictly speaking, this isn’t a Victoria Sponge, but a Fatless Sponge. It is indeed a beautifully light fluffy cake – makes great swiss rolls. Beware though, doesn’t stay soft and fresh as long as a Vic Sponge does. But then that’s irrelevant in my house, as it doesn’t get a chance to go stale!
