Thanks everyone. Hubby did like the cake and only after he ate did I tell him that it had zucchini. So that makes it 3 recipes that I have found with zucchini that he likes…the cake, zucchini chips and zucchini fritters. Now he can’t say he hates zucchini. Now to tackle eggplant. Still can’t get him to even try it.
