I’ve always used bc icing under my fondant…never an issue except you can’t always get the crisp corners on the cake like with ganache. And fondant, I always roll it up tight right after I cut it away from the cake, and any remaining and place in plastic wrap, then into ziplock bag. And your right about carrot cake…too moist. I don’t add nuts or raisins to mine, family doesn’t like. I make a carrot pound cake….good a solid.
