This cake was made for a little girl’s 2nd birthday. It is an 8 in round white chocolate mud cake, with layers of caramel and dark chocolate Swiss meringue butter cream.
Fondant is all made from scratch and flavored with vanilla and butter flavor. Colors used are Americolor, the main fondant covering the cake is Electric blue, the color was added to the water/gelatin mixture before adding to the icing sugar. This is the easiest way to achieve a strong color, I omit the glycerin as the color gel has enough of that.
Nemo, Dory, and all of the accents are made using the same fondant with 2 tsp tylose powder added to the dry ingredients of the fondant.
