My first ever wedding cake! And my first ever sugar flowers!

I absolutely loved making this cake and I was really pleased with the result. It was really difficult to envisage how it was all going to come together until I actually started constructing it at the venue.

The bottom two tiers were filled with Italian meringue buttercream, flavoured with vanilla – my new favourite buttercream coating / filling – and the top two tiers were filled with cheesecake filling at the request of the bride and groom as it was their preferred filling at the taste test. This is the easiest, tastiest filling recipe ever and contains vanilla paste to add little flecks of vanilla in the cream and tastes utterly divine with fresh fruit.

I soaked the sponge with sugar syrup as I was filling with the jam and icing fillings to keep them moist. I managed to persuade the venue to let me set up just an hour before the wedding so that the sponge and cream were as fresh as possible (and I got to see the couple tying the knot!).
