This was the birthday cake I made for my mum last year. Her nickname is “Queenie” (its a long story!) so in the Jubilee year I HAD to make her this specially royal birthday cake – this was a big accomplishment for me as it was only 3 weeks after having neuro surgery – needless to say my Mum told me off for making it but was secretly chuffed to bits as the top crown tier (lemon cake) never got eaten as was kept under a glass bowl for display purposes!
