An unusual request was made for this cake: a whirling dirvish. I learned quite a lot about what this really was – a male dance done as a meditation, and dressed similar to my cake: white clothes, black belt, and a colorful hat. I made the bust of the doll in gumpaste (on a bamboo skewer) and left it dry for several days before baking & carving the skirt. The final step of poking the bust into the cake was easy once each piece was done. I covered the cake board in a colorful fabric which mimics a material which could be found in Instanbul or other country.
