This cake was made for a 60th birthday. It is inspired by an RBI cake. It features gradient colors of periwinkle blue dots and a sugar bouquet topper of roses, orchids and hydrangeas. The sugar tag atop is hand calligraphed with the man of the hour’s name. The flavors inside are velvety coconut cake, rich coconut milk dark chocolate ganache and toasted coconut flakes.
