I was asked to make an Easter cake for a friend, and was told “Go mad – I want rabbits, and a nest of eggs on the top. And it must be lemon!” So here is my Triple Lemon Layer cake – lemon sponge, sandwiched with lemon marmalade, lemon curd and lemon buttercream. It has a Cornflake & Lindt chocolate nest with a mix of mini eggs in it. Apparently, it was a hit!
