I was so excited to celebrate another year of marriage with my sweetheart...and of course, another cake to go with it! This time, I decided to ditch the boring chocolate and go for something more exotic. A tropical delight with mango, coconut, lime and passion fruit. It was a bit of a challenge, but I loved every step of it. I started with a sable tart crust, then filled it with a delicious almond-coconut macaronade. Then I added layers of creamy mango curd, tangy passion fruit-lime mousse and smooth mango coulis. To finish it off, I decorated it with white chocolate petals, fresh mango chunks and coconut flakes.... It took some time and effort, but it was totally worth it!
