I personally have a fascination for chocolate...probably the Venezuelan blood in my veins... maybe the fact that dark chocolate is just...irresistible!
An indulgent combination of techniques and textures: base of shortbread; middle roulade of joconde biscuit filled with dark chocolate paste and whipped dark chocolate ganache; all of this encased in a decadent outer layer of dark chocolate mousse. Covered with cocoa gelee and decorated with cookie crumbs, whipped ganache and chocolate wafers.
