Feeling totally defeated. I look at this cake and I honestly just want to cry. The finish on it is just horrible. The heat and humidity yesterday was awful and it ruined all my work. I should have refrigerated the cakes before stacking but I was tired and wanted to finish. My perfectly smooth cakes were no more. Even the flowers decided not to cooperate as I broke 2 petals from the larger rose. Melted white chocolate to the rescue. At least, I think the taste will be up to par. Top is caramel mud cake, filled with a mix of chocolate SMBC/caramelized white chocolate ganache and chocolate crumbles, middle is lemon raspberry cake, filled with raspberry reduction and raspberry SMBC, bottom is black velvet cake, filled with dulche de leche and frosted in chocolate SMBC. Hopefully my niece will not be disappointed. I don’t know how you all manage to produce such stunning work in the summer months. I am really in awe.

I feel you pain, my friend, but your cake still looks beautiful. I only use fondant when necessary, because I don’t like it, and never in the summer. Since I’ve discovered ganache, it is my choice. Actually, it was you who taught me about ganache!
