Pideli Köfte (Pita Meatballs)
Although Bursa is well known with it’s döner Kebab, alias “İskender” , another delicious dish “Pideli Köfte” is so famous too. It has been served since 1929 at the restaurants specialized at this traditional flavor at historical Kayıhan Bazaar which was also established in 1400 as one of the first bazaars of Ottoman Empire.
“Pideli Köfte” ; tasty meatballs prepared with beef brisket and a kind of tallow and served with a special tomato sauce and fresh butter on small flat breads cooked at brick ovens, is as delicious as Döner Kebap". If you come to Bursa, I strongly recommend you to taste Pideli Köfte at Kayhan Bazaar. It has a round and flat, pita bread which we called “Tırnaklı pide”. We first cook that pita, take it out from oven, dice it and spread on a plate. Then we prepare 10 grams meatballs, grill them and put them on these diced pitas. At the third step we pour our special sour free tomato sauce on it. In addition to sauce, we may serve it with yoghurt, tomato, pepper or onion salad if you like too. Finally excellent goat butter is poured on it and served to customer. Bon appetite !
