Jamaican/rastafarian themed bithday cake for my niece. Cake is 6" & 8" tiers. Top tier is coconut w/a mango curd filling, coconut creme buttercream covered in pina colada fondant. (Used Kara’s Couture Cakes gourmet fondant recipe). Bottom tier is chocolate cake w/a kaluhua soak, (which is basically a simple syrup flavored w/kaluhua & espresso), an espresso buttercream filling & covered w/chocolate ganache & fondant (used Michelle Foster’s fondant recipe instead of my usual MMF). I tried out the weathered wood technique for the bottom tier. The rastafarian dancer is hand painted. All sugar decorations for the cake & board except for the ice bucket w/beer cans. That’s a dollhouse accessory but thought it would be a nice touch on the beach themed board. The beach sand is a mixture of graham cracker crumbs & brown sugar attached to board w/piping gel. Thank you Sandra. It’s not some of my better work. I think it could have used a little someting more especially on the top tier. I think w/this one, I spent more time on the details of the flavors of the cakes than on the decorations.
