This cake was made for a 40th birthday celebration. There are no hidden dowels holding it up but a carefully constructed display. Top tier was a peach melba cake- alternating peach and raspberry cake layers with peach and raspberry compote filling and Italian meringue buttercream. Second tier was a pistachio rose cake filled with white chocolate rose Italian meringue buttercream, strawberry compote, culinary roses and pistachios. Third tier was a super yummy cookie butter cake. The fourth tier was a lush strawberry cake filled with strawberry compote, strawberry Italian meringue buttercream and vanilla bean italian meringue finish.
