Today, January 15th, is Martin Luther King Day here in the USA, and because his favorite dessert was Pecan Pie, I made red velvet cheesecake cupcakes, decorated with a light vanilla buttercream, sprinkled with toasted crushed pecans and drizzled with caramel sauce! (next time, I need to remember not to overfill the cupcake liners) :)
