This cake is very popular that i make. It usually doesn’t have flowers on it, as it is usually covered with coconut, and maraschino cherries for decor. It also has pineapple filling in it, which makes it even more moist, the cake inside is vanilla, or can be coconut flavor cake.
When someone wants it decorated, i leave the center top with out coconut, so i can pipe buttercream flowers on it.
I put a layer of buttercream icing and crushed pineapple in between the tiers, and on top. Then i do a crumb coat of buttercream on the sides. I add whipping cream all over the outside of the cake. then cover top and sides with coconut.
