February 27th was National Cupcake day so I figured it was a good excuse to try out some new recipes. I never knew it was a thing until I saw it advertised in a flyer for a grocery store.

My coworkers and the students didn’t mind too much in being my guinea pigs. I made pina colada, toffee crunch, gooey chocolate s’mores and lemon with blueberry frosting. I wasn’t 100%happy with the s’mores ones, directions said to fill 3/4 full being careful not to overfill, that there would be extra batter, but they were tiny! I should have filled them more and used up all the batter. I almost redid them but decided it was a learning experience instead.
