This stacked cake is made up of a top 6" and a bottom 10", with the top set to the back. I use Satin Ice fondant, and added tylose to make the skewered snowflakes (my client had specifically requested “no wires”). The draping of the fondant over both cakes at the same time, and not smoothing it, but letting it fall into place, is what gave this cake the snow drifting effect. The cake was airbrushed with Americolor blue pearl sheen, and the snowflakes were embellished with glitter sugar. The trees, mountain and boulders are made from home made modelling chocolate, with buttercream snow, and sprinkled with a little white glitter sugar for that little extra magical sparkle.
