Hi, I am new to this site so if I have posted this in the wrong area please move or delete. I love all forms of royal icing work, but my first love is extension work (this is an advanced piping technique, but basically means piped lines which extend beyond the cake). I teach cake decoration. I have written two books the first was published in 1996 ‘Extension Work’ the second was published October 2015 ‘Piping on Cakes’. I am very much into the history of cake decorating, if you have attended the Cake international exhibition (UK) in the last few years then you might have seen my Royal Icing History table – the aim of this table is to bring back the ‘Names’ which have been lost and show the style of work they were known for – this table is also to show how versatile the medium of royal icing is.
