I took a literal reflection on this graduation. Peter got his red seal in his trade so his family wanted to surprise him with a cake. The humidity was pretty high so I ran into fondant problems. I tried a new technique for applying the fondant and ended up with a bit of a bulge near the rope on the sides, not sure if that was the technique or the humidity. Anyhow, lessons learned. I discovered the higher the cake the harder it is for apply fondant, so if anyone has any advice on applying fondant to high cakes please share. Over all I’m pretty happy with this cake. Forgot to mention, the back ground blue fondant on the cake is marbled with some white to add some dimension.
