This cake was made for a birthday – it is decorated with gumpaste candies, lollipops, bonbons and candy dots. I love sparkly cakes, so I dusted each piece with luster dust for a little more pizzaz and added gumpaste “pearls” on each tier. This was a coconut white sour cream cream with coconut cream cheese filling. I infused it with a simple syrup for added moisture.
I call this my “Happyland Cake” because it is a happy-looking cake! I got the inspiration from a picture my son’s girlfriend sent me – she’d found the cake on the web and thought I should make one just like it. So, whoever you are, I appreciated the inspiration!
