This cake was made for a 90th birthday party and modeled after the recipients record breaking Mackinaw trout that he has mounted on his wall.

Originally his daughter had thought she wanted a sheet cake “board” with a mounted fish cake topper, but since this thus as a family friend of mine, I told her I’d come up with something. As the surprise, I wanted to bring this fish back to life!

It is sculpted completely out of a homemade burnt almond cake and covered with buttercream and fondant.
