I created her in 2011, and uploaded the pics to Flickr without understanding the need for WATERMARKING! Always watermark your pics!!!

My middle daughter has always been very specific in her Birthday requests, and this one was no different. When she requested this one, I was not too surprised. She wanted “a Rainbow Pegasus Unicorn with a Rainbow Horn and Rainbow wings and a tiny baby unicorn too”. Anything for you my little Baby Rainbow Pegacorn! This creation was filled with Golden Almond Pound Cake with pineapple-mango filling and Vanilla Buttercream. The feathers and mane are made of individually hand-shaped hardened gumpaste. The wings and head have a food-safe internal support skeleton and are composed of rice-krispy-treat. It was a HUGE hit at the party, and my 7-yr-old was very brave when it came time to cut into it. No one cried, I promise, and once they discovered how delicious the inside was, it was all forgotten and forgiven!
