After making my standard chocolate mud cake, layering and covering it with smooth chocolate ganache I carefully covered the 6 inch square cake with white rolled fondant. With a paper template of my own on sketched on paper I made it measure to fit exactly the size of the cake. Then I stuck the design to the kitchen bench top and placed some wax paper over the top so I could start laying out my strips of green evenly. Then rolled some green modelling chocolate (recipe was part of the Craftsy downloadable course materials) in my pasta machine to make nice strips that were of very even thickness.
