My friend Karla graduated with her Master’s Degree from East Carolina University recently. I made this cake as a gift for her. She loves Sponge Bob and East Carolina University colors are Purple and Gold and their mascot is a Pirate.
The weather here was awful for cake decorating. High Humidity, (80%) and low barometric pressure makes the buttercream icing do wonky things. It’s a Murphy’s Law kind of day. If you look at the second picture you will see where I dropped my cellphone into the cake while trying to take the photo. I was able to fix it by placing the cake in the fridge for about 30 minutes, scraping off the messed up icing with a scalpel, and refilling the ‘hole’ with icing and smoothing it out with paper towels. Of course I was out of Viva’s! I had to use textured paper towels! I’m glad this cake is finished and I’m glad it wasn’t a wedding cake! Thanks for looking!
