Special request I had for a Birthday! Chocolate cupcake studded with crushed thin mint cookies, topped with a swirl of mint buttercream and half a thin mint cookie :)

Thank you! They were tasty! The recipe I used called for traditional buttercream though, and I think next time I make these, I’ll swap it out for swiss meringue ;)
