Coconut-infused chocolate cupcakes with an old-fashioned cooked caramel frosting, chocolate drizzle and toasted coconut! As a complete non-coconut person, these were a most pleasant surprise – so yummy! :)

Thanks so much! These were a nice experiment – though I think I want to switch up the frosting a little next go-round and perhaps use a caramel version of my traditional american buttercream as this “cooked” frosting was quite thick! ;)
